In your video -- which taught me several things despite having used Linux exclusively since 1995 -- you reference the Appearances application under System > Preferences... I have no such beast. Where abouts is that?

This is a new feature under Ubuntu 7.10 (Gutsy). The tabs in the "Appearance Applet" are available individually in System -> Preferences under Ubuntu 7.04 (Feisty). Hope that helps.
